The following recipes are Keto Friendly and Low Carb and extremely basic and easy.
I am not a chef, nor am I a nutritionist, and I definitely am not a food snob. I am someone who has returned to the kitchen as I had no choice. My low-carb, high-fat, moderate protein, no grain, whole-food-as-much-as-possible lifestyle requires I do a lot of my own cooking. I reluctantly admit, there is a bit of satisfaction when something you made tastes good, and there is no MSG within a mile of my kitchen. As Keto Friendly is body friendly, it is rare that anything goes in my mouth that has ingredients I cannot pronounce.
As I am also disabled, fancy chiffonade, perfectly minced vegetables, and expertly shot photos will not be featured here. The last time I was in the ER to be stitched up, the doctors recommended I ditch my mandolin and stick to my food processor with its multi-blades.
My kitchen appliances consist of a Blendtec Blender, an Oster Food Processor, a Hamilton Beach Slow Cooker, and an Immersion Blender. Of course, an electric can opener, coffee pot and tea kettle are part of my arsenal. My favourite frying pan is cast iron of course. I use a variety of baking sheets and pans, as well as silicone sheets and splatter guards. Oh and lots and lots of paper towels and aluminium foil. Mustn’t forget my faithful housecleaner who sets my kitchen right once a month!
