Low-Carb, Keto Friendly, Broccoli and Cheddar Easy Soup Recipe

240g (8.5 oz) Broccoli Chopped (Peel Stems)
40 g (1.4 oz) Cheddar Cheese – freshly grated
2 cups Chicken broth
1 cup Water
1/2 cup Heavy Cream
Mrs Dash Seasoning, Salt, Pepper, pinch Nutmeg. Feel free to substitute with your favourite spice.
1/2 small onion chopped fine, cook with broccoli
The nutritional counts of this recipe do not include the onion.
I didn’t think to add onion when making this the first time and I honestly didn’t notice the difference! However, it might be nice.
Optional garnish – 2 slices bacon, cooked, crumbled as a garnish. Again, the nutritional values for bacon are not included in this recipe.
Heat chicken broth and water to a low boil. Add 1/4 pinch of salt if you are using the low-sodium broth.
Add chopped broccoli (and onion if you are adding it). Cook until broccoli is tender.
Transfer everything to a high-speed blender, blend until smooth, then return everything to the pot, lower heat to medium.
Tip A food processor will not blend this soup well as it will not break down the fibre in the broccoli. Use a blender!
Add the heavy cream, cheese, and spices. Stir gently on medium heat until the cheese is completely melted and incorporated.
Optional: If you like a really creamy soup without any texture, use an immersion blender at this stage. I also like a lot of cracked pepper in my soup.
Each serving: 301 calories; 6.88 g net carbs; 25.5 g fat; 10.60 protein
